All three snacks start with milk nougat — the format is what changes. Nougat candy (牛軋糖) is the chewy block, nougat crackers (牛軋餅) sandwich the nougat between crackers, and snowflake crisp (雪花酥) folds the crackers into the nougat. That last one is the one I make.
Nougat candy, nougat crackers, snowflake crisp
牛軋糖 is Taiwanese nougat candy: milk nougat with nuts folded through, cut into rectangles, usually wrapped one by one. Chewy, dense, milky — you bite in and it pulls back.
牛軋餅 puts that same nougat between two crackers. Crunch outside, chew in the middle, and the cracker cuts the sweetness. The neat shape makes them a common 伴手禮 — the little gift you bring to someone's home.
雪花酥 flips the format. You fold broken crackers, dried fruit, and nuts through the soft nougat, press it into a slab, dust it in milk powder, and cut it. The crackers live inside the nougat instead of around it, so each bite gets a little of everything.

The scallion one is savory, and it works
蔥軋餅 swaps the plain cracker for a scallion one — sweet, milky nougat against savory, oniony crunch. If you've put flaky salt on caramel, you already understand it.
Why snowflake crisp is the one I make
The format gives me more room to work. Ours is a fold-and-press job: melt the marshmallow, stir in milk powder, fold in the crackers and mix-ins, press, and cut. Swap the mix-ins and you have a new flavor without changing the structure — that's how we ended up with five.
And I like how it looks. The milk-powder dusting and slightly irregular cuts feel handmade without being careless. A nougat cracker is tidy; snowflake crisp has a little more movement.
