The founders

Nicole and Leo started Snowcubes out of their kitchen in Little Neck, Queens, after Nicole began making her family's snowflake crisps for friends. Nicole, who is Taiwanese-American and grew up watching her mom make them at home, hand-presses every cube. Leo, who handles the digital side and customer service, calls himself "the rest of the operation."

They ship twelve to a box, fresh on ship days, in five flavors — cranberry pistachio, strawberry matcha, cherry oreo, oatmeal raisin crumble, and pineapple coconut. There's no factory, no warehouse, and no plan to grow into one. They also pack wedding favors, which is how a lot of new customers find out about them. The whole operation is two people in Queens.

Quotables + fast facts

Quotables (Nicole)

"There's no factory, no warehouse, no plan to grow into one. We make snowcubes the same way every time, by hand, in our kitchen."

"People ask if we're scaling. We're not. The cookies are the same because the kitchen is the same."

"They started as wedding favors. Now they ship to people who aren't getting married, too."
